One gas one charcoal, I think charcoal is the best but not worth the trouble!

wood is by far the best to me

I've never had that. Any particular type of wood?

I use mesquite for steaks and chicken, hickory for pork, wood chunks piut a good smoke flavor to the meat, and you can reuse what doesn't burn up. some people like apple wood, oak among others for cooking with too, I've never really tried them

Thanks, I'll keep that in mind. We have a great pizza joint that uses hickory and it gives it a great flavor!

Pepe Franks Pizza, google it, you will get lots of hits, it says coal fired but they do use hickory for flavor. They don't deliver, the don't even answer their phone. At least a one hour wait in line to get in the door and another hour for the pizza to arrive. I bring the family early, its good, but not worth a two hour wait!

there is a BBQ joint in Greenville NC called B's that not too far from here, and their phone is unlisted , I called information one day and the operator told me without even looking that it was unlisted, just a hole in the wall type place but lunch time you will see them lined up out the door, drs, lawyers, CEO's right in line with ditch diggers, construction workers and etc, and when they run out, they close up and go home period. and yeah its that good, best bbq chicken I ever had in a resturant and bbq pork
